Growing food in this climate means controlling the environment — greenhouses, shade structures and enclosed livestock housing, built to hold conditions the outside will not provide.
That makes the chemistry unusually hard on steel: humidity is held deliberately high, ammonia accumulates where animals are housed, and irrigation carries fertiliser salts across frames and pipework. Material choice follows what is in the air and the water.
